Recipe of the Month: Baked Chicken, Apple and Havarti in Phyllo

This month’s recipe is a delight from Wesley Homes Lea Hill’s Harvest Moon Open House: Baked Chicken, Apple and Havarti in Phyllo.

Ingredients

24 Phyllo Cups

2 each Apples, Diced Small

1 pound Chicken, Cooked, Diced

5 ounces Celery, Diced Small

5 ounces Onion, Diced Small

3/4 teaspoon Mustard

1 teaspoon Curry Powder

5 ounces Raisins

1/4 cup Green Peas

1/2 cup Mayonnaise

1/4 cup Havarti Cheese, Diced Small

Combine all ingredients well and chill. Place 1 tablespoon of mixture in a Phyllo cup. Garnish with a slice green onion. Makes 24 servings.

Wesley Homes Lea Hill honored with Executive’s Award for Community Preparedness

King County Executive Dow Constantine recognized Wesley Homes Lea Hill in Auburn for its commitment to emergency preparedness and response during the second annual Executive’s Award for Community Preparedness. The award is given each September during National Preparedness Month in recognition of outstanding efforts made by volunteer organizations to prepare for and respond to emergencies and to promote safer communities, strengthening King County as a whole. Alzheimer’s Walk 2012

The Wesley Walkers had 17 team members gathered for the annual Walk to End Alzheimer’s at Thea Park in Tacoma on Saturday, September 8th. Our team raised over $1,700 this year to benefit the work of the Alzheimer’s Association. Several team members brought family to accompany us on this two mile walk. A few noteworthy items:

  • This was Lori Britton’s 14thyear of participating in the walk, and her help was invaluable to the team! She was joined by Lea Hill resident Mary Brevik.
  • Peg Ogilvie raised the most individual donations for our team ($380.)
  • Katheryn Howell was accompanied by the most family members – her mom and two dogs.
  • Edith Lizarraga, Theresa Hile and Karen Bjelland recruited their children to join them, and Mirjam Jackson brought her husband, James, along to join in the fun.

The weather was perfect, the cause was worthy and the company was incredible. We appreciate the contributors and the walkers for showing the heart of Wesley Homes. Thanks so much to all who supported our 2012 Wesley Walkers!

T.J. Johnston Receives French Medal

On a sunny Saturday, Wesley Homes Des Moines resident Theodore J. Johnston (T.J.) was honored by the French government for his heroic deeds 65 years ago during World War II. T.J. received the Chevalier Légion d’Honneur – Medal of Chevalier of the French Legion of Honor – during ceremonies held in The Gardens on July 28, 2012. He is one of only 12 United States citizens to have received this honor, which is equivalent to a U.S Medal of Honor or a British Knighthood. Read the rest of this entry »

Lea Hill Garage Sale Breaks Record

Wesley Homes Lea Hill’s 6th Annual Resident Garage Sale was a great success. The four-day event raised $14,513.08.

“We had 74 volunteers at various times from January 2012 to the day of the garage sale,” said Marcella Wright, Wesley Homes Lea Hill resident and Garage Sale Committee Chair. “We had so many items this year that we used 2,100 square feet of garage space.
